Why does the right oil matter so much?

Because oil is the only thing keeping two pieces of metal apart while they spin together thousands of times a minute. Every manufacturer tests and approves one for each engine, with a specific thickness and its own seal of approval, and that seal is the part almost nobody looks at when they buy the bottle.
